Apple Oat Cookies

These Apple Oat Cookies taste like fall in cookie form—warm cinnamon, cozy apple pie spice, and little bits of apple in every bite. They’re quick to mix, bake in minutes, and make a great snack, breakfast cookie, or lunchbox treat.
Ingredients
3 cups oat flour
1 teaspoon baking soda
2 1/2 teaspoons baking powder
2 teaspoons salt
1 teaspoon cinnamon
2 teaspoons apple pie spice
3/4 to 1 cup brown sugar (to taste)
1/2 stick butter, softened
2 eggs
1 cup milk
1 cup dehydrated apples, crushed
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together oat flour, baking soda, baking powder, salt, cinnamon, and apple pie spice.
In a separate bowl, whisk brown sugar, softened butter, eggs, and milk until smooth.
Add wet ingredients to the dry ingredients and stir just until combined. Fold in crushed dehydrated apples.
Scoop dough onto the prepared baking sheet.
Bake 10–12 minutes, until set and lightly golden.
Cool on the pan 5 minutes, then transfer to a rack to cool.
