BBQ Meatloaf

This BBQ meatloaf is built for batch days. It’s egg-free, holds together beautifully, and freezes without turning crumbly or dry. The BBQ sauce acts as the binder, so it reheats clean, slices well, and actually works for real-life dinners.
Ingredients
• 2 lb ground beef• 1 1/2 cups finely diced onion• 1/4 cup minced garlic• 1 cup BBQ sauce (plus extra for topping, optional)• 3 Tbsp BBQ seasoning• 2 cups breadcrumbs• 1 1/2 cups finely diced green pepper or diced green chiles
No eggs — BBQ sauce replaces them
Instructions
Preheat oven to 375°F. Line a sheet pan with parchment or foil, or lightly grease a loaf pan.
In a large bowl or stand mixer on low, combine ground beef, onion, garlic, BBQ sauce, BBQ seasoning, breadcrumbs, and green pepper or chiles.
Mix just until combined — do not overwork.
Shape mixture into a loaf on the pan or press into a loaf pan.
Brush the top with additional BBQ sauce if desired.
Bake 50–70 minutes, depending on thickness, until internal temperature reaches 160°F.
Rest 10 minutes before slicing.
