This buffalo chicken spread is what happens when leftover buffalo chicken gets upgraded into something dangerously snackable. It’s like buffalo chicken dip, but thicker, sturdier, and actually spreadable — built for toasted bread, open-faced melts, and casual grazing. Creamy, savory, and flexible, this is a low-effort way to turn leftovers into something that feels intentional instead of accidental.

Ingredients

8 oz cream cheese, softened (use 16 oz if doubling)

1–2 teaspoons minced garlic (to taste)

½ teaspoon smoked paprika

¼ teaspoon white pepper

Pinch of salt (optional)

3–4 cups cooked buffalo chicken, shredded

½–1 cup diced green bell pepper (optional)

½–1 cup shredded cheese (cheddar or mozzarella, optional)

In a bowl, mash together softened cream cheese, minced garlic, smoked paprika, white pepper, and salt (if using) until smooth.


For a spreadable texture, transfer the cream cheese mixture to a food processor. Add shredded buffalo chicken and bell pepper if using.


Pulse until the mixture is thick and spreadable but still has texture. Do not over-process into a paste.


Taste and adjust. If the chicken is mild, add a splash of buffalo sauce. If it’s already spicy, leave it as is.


🍽️ HOW TO SERVE


Spread onto toasted baguette slices for open-faced melts. Optional: top with shredded cheese and broil for 1–2 minutes.


Also great served with crackers, pretzels, celery sticks, tortilla chips, or used as a filling for wraps and quesadillas.

This recipe is ideal for leftover buffalo chicken and works best when the chicken already has good flavor.


Bell pepper is optional but adds crunch and balances the richness of the spread.
