Butternut Squash Mac and Cheese

Butternut Squash Mac and Cheese is a cozy twist on the classic comfort dish, combining creamy pasta with roasted squash and sharp cheddar cheese. The squash adds natural sweetness and a velvety texture, making this dish both comforting and nourishing.
Ingredients
3 pounds butternut squash, peeled and diced
1 large onion, chopped
1 tablespoon minced garlic
Olive oil
1 cup vegetable broth
1 teaspoon salt
1½ cups milk
¼ teaspoon black pepper
2 cups sharp cheddar cheese, shredded
2 tablespoons nutritional yeast
1 pound elbow macaroni
Instructions
1. Heat olive oil in a large pan over medium heat. Add onion and garlic and cook until softened.
2. Add diced butternut squash and vegetable broth. Cook until the squash is very soft.
3. Season with salt, then stir in milk and black pepper.
4. Add shredded cheddar cheese and nutritional yeast, stirring until the sauce is creamy and smooth.
5. Cook macaroni according to package directions until al dente. Drain.
6. Combine cooked pasta with the butternut squash cheese sauce and stir until fully coated.
7. Serve hot.
