Chili Seasoning (From Scratch)

A bold, from-scratch chili seasoning made for full pots of chili — rich, balanced, and deeply flavorful.

This is not a “sprinkle a little into taco meat” chili seasoning. This is full-scale, from-scratch chili seasoning — the kind meant for big pots, slow cookers, and serious bowls of chili. It’s rich, balanced, slightly sweet, and deeply savory, built to stand on its own without needing packets or shortcuts. Mix up a big jar, or scale it straight into a Dutch oven or crockpot and build a bucket of chili around it.

Ingredients

8 tablespoons chili powder


4 tablespoons ground cumin


5 tablespoons brown sugar


2 teaspoons garlic powder


2 teaspoons onion powder


2 teaspoons paprika (smoked, if possible)


2 teaspoons dried oregano


2 teaspoons salt


1 teaspoon black pepper

Instructions

  1. Add all ingredients to a large bowl or jar.

  2. Mix thoroughly until evenly combined.

  3. Transfer to an airtight container.

  4. Store in a cool, dry place until ready to use.
