Crispy Jalapeño Chicken Tacos

These Crispy Jalapeño Chicken Tacos are stuffed with a creamy ranch chicken filling, melty mozzarella, and crunchy peppers, then pan-fried until golden and crisp. They’re fast, satisfying, and easy to adjust—leave out the jalapeños for mild, or load them up for heat.
Ingredients
2 chicken breasts, cooked and shredded
½ cup diced red bell pepper
½ cup diced white onion
1 cup shredded mozzarella
1 cup ranch dressing
Optional: 5 jalapeños, sliced into rings
Small white corn tortillas
Olive oil, for frying
Instructions
In a bowl, combine shredded chicken, diced bell pepper, diced onion, mozzarella, and ranch dressing. Mix until evenly coated.
Heat a thin layer of olive oil in a large skillet over medium-high heat.
Add tortillas to the skillet. Spoon about 1 tablespoon of filling into each tortilla. Add jalapeño rings if using, then fold tortillas in half.
Fry until golden and crispy on both sides, flipping once, about 2–3 minutes per side.
Remove to a paper towel-lined plate and repeat with remaining tacos.
Serve hot with sour cream and creamy jalapeño sauce if desired.
