Delicious White Chicken Chili

This Delicious White Chicken Chili is creamy, comforting, and packed with flavor. Tender chicken, green chilis, white beans, and warm spices come together with a rich, cheesy base for a cozy dinner that’s easy to make and perfect for leftovers.
Ingredients
3 cups shredded chicken breast
1 white onion, chopped
1 tablespoon minced garlic
1–2 tablespoons olive oil
1 tablespoon cumin
1 tablespoon smoked paprika
1½ teaspoons oregano
1½ teaspoons cilantro powder or dried cilantro
1½ teaspoons chili powder
Salt and white pepper, to taste
29 ounces chicken broth
7 ounces diced green chilis
8 ounces ricotta or cream cheese
30 ounces white beans, rinsed and drained
2 tablespoons lime juice
1 cup shredded cheddar cheese
1 cup finely diced bell pepper
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add the chopped onion and garlic and cook until softened.
2. Stir in cumin, smoked paprika, oregano, cilantro powder, chili powder, salt, and white pepper. Cook for about 3 minutes to toast the spices.
3. Add the shredded chicken and stir to coat with the seasonings. Cook for 2–3 minutes.
4. In a bowl, whisk together the cream cheese or ricotta with the chicken broth until smooth.
5. Pour the broth mixture into the pot and stir well. Add the white beans.
6. Heat until warm, then add the cheddar cheese and stir until melted.
7. Stir in the diced green chilis, bell pepper, and lime juice. Simmer on low for 20 minutes.
8. Serve hot with desired toppings.
