Garlic Butter Shrimp Scampi is a fast, flavorful pasta dinner with tender shrimp in a buttery garlic sauce finished with Parmesan. It’s easy enough for a weeknight but feels special, especially served with a sprinkle of parsley and a squeeze of lemon.

Ingredients

1 lb spaghetti noodles


1 white onion, finely chopped


1 tablespoon minced garlic


½ stick butter


1 teaspoon red pepper flakes


1 teaspoon dried parsley


½ cup cooking wine


½ cup grated Parmesan cheese


1 lb medium shrimp, peeled and deveined


Olive oil


Salt and pepper, to taste


Fresh parsley, for garnish

Instructions

  1. Cook spaghetti in salted boiling water until just slightly underdone. Drain and set aside.

  2. In a large skillet, heat a drizzle of olive oil over medium heat. Sauté onion and garlic until softened and fragrant.

  3. Add butter, red pepper flakes, and dried parsley. Stir until butter melts.

  4. Pour in cooking wine and simmer for about 10 minutes to reduce slightly.

  5. Stir in Parmesan cheese until melted and the sauce is creamy.

  6. Add shrimp and cook until pink and opaque, about 3–5 minutes.

  7. Add the cooked spaghetti to the skillet and toss until well coated.

  8. Season with salt and pepper to taste, garnish with fresh parsley, and serve immediately.
