Ginger Honey Cough Drops

These Ginger Honey Cough Drops are a simple homemade candy made with honey, lemon juice, and fresh ginger. They’re great to keep on hand during colder months and are easy to portion into molds or spoon onto parchment to set.
Ingredients
½ cup honey
2 tablespoons fresh lemon juice
1 teaspoon fresh ginger, finely grated
Instructions
In a medium, deep saucepan, combine honey, lemon juice, and finely grated ginger. Stir to combine.
Heat over medium-low, stirring often, until the mixture reaches 300–310°F (148–154°C) on a candy thermometer (hard crack stage).
Watch closely as it foams. If it rises too high, briefly remove the pan from heat, let it settle, then return to low heat.
Remove from heat. Strain out ginger if desired, then carefully pour into small candy molds or drop by teaspoons onto parchment paper or a silicone mat.
Let drops cool completely until hard. (You can chill to speed this up.)
Dust with powdered sugar, cornstarch, arrowroot powder, or ground cinnamon to prevent sticking. Store in an airtight container in a cool, dry place.
