Kielbasa Sheet Pan Freezer Packs

These kielbasa sheet pan freezer packs are the “I need dinner but I don’t need a project” kind of meal. You prep everything once, freeze it flat, and later dump it straight onto a sheet pan for a real, filling dinner with almost no effort. Kielbasa, potatoes, and peppers do the heavy lifting here — simple ingredients, flexible seasoning options, and zero overthinking.
Ingredients
🧺 INGREDIENTS
1 kielbasa sausage (12–14 oz), sliced into 1-inch pieces
3–4 cups potatoes, chunked (blanched frozen potatoes work well)
1–2 cups green bell pepper, cut into 1-inch pieces½ cup onion (optional)
Seasoning – choose one option:
Option A (basic):
2 tablespoons oil,
1 teaspoon salt, ½ teaspoon black pepper,
1 teaspoon garlic powder,
1 teaspoon paprika
Option B (smoky):
2 tablespoons oil,
1 tablespoon BBQ seasoning,
pinch of salt
Option C (herby):
2 tablespoons oil,
1 tablespoon Italian seasoning,
1 teaspoon garlic powder,
salt and pepper to taste
Instructions
❄️ FREEZER PREP / MAKE-AHEAD INSTRUCTIONS
Add potatoes, peppers, onion (if using), and kielbasa to a large bowl.
Toss with your chosen seasoning and oil until everything is evenly coated.
Transfer mixture to a gallon freezer bag, press flat, label, and freeze.
🔥 COOKING INSTRUCTIONS (FROM FROZEN)
Oven: Preheat oven to 425°F. Dump frozen contents onto a sheet pan, spread into an even layer, and bake for 35–45 minutes, stirring once halfway through, until potatoes are crisp and kielbasa is browned.
Air Fryer: Cook at 400°F in batches for 12–16 minutes, shaking halfway through.
🍽️ HOW TO SERVE
Serve as-is for an easy dinner, or add mustard, a quick sauce, or a simple side salad or roasted broccoli.

Refrigerator (cooked leftovers): 3–4 days
