Mediterranean Chicken Meatballs

These Mediterranean Chicken Meatballs are fast to prep and perfect for meal prep. Chicken, pesto, and breadcrumbs come together in minutes, then you freeze the meatballs so dinner is basically handled later. Cook them in a skillet or bake in the oven until golden and cooked through.
Ingredients
2 chicken breasts
3 tablespoons pesto
1/4 cup breadcrumbs
Instructions
Cut chicken breasts into chunks.
Add chicken, pesto, and breadcrumbs to a food processor. Pulse just until combined and the mixture holds together (don’t over-process).
Scoop and roll into meatballs.
Place on a parchment-lined baking sheet and freeze 1–2 hours until firm.
Transfer to a labeled freezer bag and store frozen.
To cook (from thawed):
Oven: Bake at 400°F for 18–22 minutes, until 165°F inside.
Skillet: Cook in a lightly oiled skillet over medium heat, turning often, 10–12 minutes until 165°F inside.
