Peanut Butter Protein Cookies

These Peanut Butter Protein Cookies are quick to mix, easy to bake, and great for grab-and-go snacks. Peanut butter, maple syrup, oat flour, and protein powder make them hearty without tasting like “health food.” Bake a batch and keep them on hand for busy days.

Ingredients

1 cup peanut butter, warmed


1/2 cup water


1/2 cup maple syrup


1 1/2 teaspoons vanilla extract


1/2 cup brown sugar


2 tablespoons baking powder


2 tablespoons vanilla protein powder


1 1/2 teaspoons salt


3 cups oat flour


1 egg

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Warm peanut butter just until soft (not runny).

  3. In a large bowl, mix warmed peanut butter, water, maple syrup, vanilla extract, brown sugar, and egg until smooth.

  4. In a separate bowl, whisk together baking powder, vanilla protein powder, salt, and oat flour.

  5. Add dry ingredients to the wet ingredients and stir until fully combined.

  6. Scoop dough onto the prepared baking sheet, spacing cookies about 1 1/2 inches apart.

  7. Bake 10–12 minutes, until set and lightly golden.

  8. Cool on the pan 5 minutes, then move to a rack to cool completely.
