Watermelon Jello

This Watermelon Jello is a simple, make-ahead dessert that tastes like summer. You’ll bloom gelatin in cool watermelon juice, warm the remaining juice with sugar, then chill until perfectly set. Serve it sliced, cubed, or in a pretty bowl for an easy crowd-pleaser.
Ingredients
8 cups watermelon juice, divided1½ cups sugar4 tablespoons gelatin
For blooming:1½ cups watermelon juice (taken from the 8 cups above)
Instructions
Pour 1½ cups watermelon juice into a bowl. Sprinkle gelatin evenly over the juice and let bloom for 5–10 minutes.
In a saucepan, heat the remaining watermelon juice with sugar until very hot and the sugar fully dissolves (a gentle simmer is enough).
Remove from heat. Stir in the bloomed gelatin until completely dissolved.
Pour into a jello mold or serving bowl.
Refrigerate at least 4 hours (or overnight) until fully set. Slice or scoop to serve.
