This Watermelon Pudding Ice Cream is a simple homemade summer treat made with fresh watermelon juice and a quick pudding-style base. Cook it on the stovetop, let it cool, then freeze until scoopable for a refreshing dessert on hot days.

Ingredients

2 cups milk


3 tablespoons cornstarch


2 cups fresh watermelon juice


½ cup sugar


¼ teaspoon salt

Instructions

  1. In a saucepan over medium heat, warm the milk and watermelon juice.

  2. In a bowl, whisk together sugar, salt, and cornstarch.

  3. Slowly whisk the dry mixture into the warm milk mixture, stirring constantly to prevent lumps.

  4. Cook, stirring constantly, until thickened and the mixture coats the back of a spoon.

  5. Remove from heat and pour into a heatproof jar or container.

  6. Cool to room temperature, then cover and freeze for at least 4 hours, or until scoopable.

  7. Scoop, serve, and enjoy.
