Santa Claus, also called Christmas Melon, has pale green to white flesh with a juicy texture and a mildly sweet flavor. The fruit resembles a small, football-shaped watermelon, with a hard, wrinkled rind in shades of green and yellow.

The thick skin keeps its fragrance subtle, so a strong aroma is not the best ripeness cue. Look for a soft blossom end that yields to gentle pressure and a rind becoming a brighter yellow. Rind color can vary.
