These Crockpot Italian Chicken Sandwiches are an easy, hands-off dinner made with chicken breasts slow-cooked in a flavorful tomato, Italian dressing, and pesto sauce. Once the chicken is tender, shred it and serve it on buns for a simple, hearty meal.

Ingredients

15 oz diced tomatoes


2 tablespoons tomato puree


½ teaspoon salt


1 teaspoon sugar


½ cup Italian dressing


¼ cup pesto (or ¼ cup fresh basil)


3–4 chicken breasts


Sandwich buns or rolls

Instructions

  1. In a bowl, mix diced tomatoes, tomato puree, salt, sugar, Italian dressing, and pesto (or fresh basil).

  2. Place chicken breasts in the crockpot and pour the tomato mixture over the top.

  3. Cover and cook on low for 5–6 hours, until chicken is very tender.

  4. Shred chicken with two forks and stir back into the sauce.

  5. Serve the shredded chicken on sandwich buns or rolls.
